Plains Medical Complex. It’s not every day that food of this quality and variety is found in a hospital,” said John Walker, the hospital’s CEO.
Sarria graduated with a Bachelor’s Degree in culinary arts from Sacred Heart College in
Spain. Following college he successfully trained as a chef in England, France and Italy. He
has worked aboard luxury cruise ships and in hotels. Sarria came to the United States and worked for Aramark Food Services. He has headed up the dietary services at Penobscot Valley Hospital in Lincoln, Maine and more recently at Saint Edwards College in Austin,
Texas. According to Sarria, when he was ready for a change, Dodge City and Western Plains offered what he was looking for.
Changes to the Western Plains menu were one of Sarria’s first goals. “We now offer a four week menu rotation so that you’ll only see a feature on the menu one time every four weeks,” says Sarria. “Variety is the spice of life and I believe it also positively impacts the healing process.”
