Spanish hot chocolate offers seasonal sensation.

Tonight I went Christmas caroling with my daughter’s choir.  Despite the warmer weather we still enjoyed a cup of hot chocolate along the way. As we sang traditional holiday songs I couldn’t stop thinking about one of my favorite recipes for hot chocolate. Americans often make hot chocolate by opening a package of Swiss Miss and adding it to hot water. Sometimes they even add miniature marshmallows. I prefer the traditional Spanish hot chocolate, a delicious chocolate drink so thick it’s like eating hot chocolate pudding. The recipe is simple. The flavor is overwhelming as it melts in your mouth. This winter season try the following recipe for Spanish hot chocolate and I promise you’ll never open another package of hot chocolate mix again!

Spanish Hot Chocolate

2 cups whole milk
2 Tbsp. brown sugar
½ tsp. cornstarch
1 tsp. orange zest
Pinch of cinnamon
4 oz. bittersweet chocolate

Whisk milk, brown sugar, cornstarch, orange zest and cinnamon in a saucepan.  Heat mixture over low heat and stir constantly. Remove from heat and whisk in chocolate until melted. Return to heat and bring to a low boil. Continue stirring the mixture constantly until thick and hot. Pour into mugs and garnish with freshly whipped cream (don't cheat with Cool Whip!).
